3 Easy Dinners My Kids Actually Eat

There are nights when I have the energy to cook… and then there are nights when I just don’t.

And if I’m being honest, most of the time I’m just trying to get something on the table that everyone will actually eat without complaints.

I’ve learned over the years that it doesn’t have to be complicated. It doesn’t have to be Pinterest-perfect. It just has to work.

These are a few dinners I keep going back to—because they’re easy, they’re quick, and most importantly… my kids will actually eat them.

One of my go-to meals is tacos. Not fancy, not overthought—just simple tacos with whatever we have on hand. Ground beef, shredded cheese, lettuce, maybe some salsa. It’s one of those meals where everyone can make it their own, and that alone makes it easier.

Another one is baked chicken with a simple side. I’ll season it, throw it in the oven, and pair it with something easy like rice, potatoes, or even just a bag of frozen veggies. It’s low effort but still feels like a real meal.

And then there are the nights where I lean on pasta. Spaghetti, Alfredo, or even just buttered noodles when it’s been a long day. It’s quick, it’s filling, and it’s something I know won’t turn into a battle at the dinner table.

Over time, I’ve stopped trying to overcomplicate meals.

Not every dinner needs to be impressive.
Not every night needs a new recipe.

Sometimes, the best thing you can do is keep it simple and give yourself a break.

Because feeding your family doesn’t have to be perfect… it just has to get done.

Tacos (our go-to easy night)
What I use:

  • Ground beef
  • Taco seasoning
  • Tortillas
  • Cheese, lettuce, salsa

How I make it:
Cook the ground beef, add seasoning, and let everyone build their own tacos. It’s quick, easy, and there’s usually no complaining.

Baked Chicken + Sides
What I use:

  • Chicken breasts
  • Olive oil + seasoning
  • Potatoes
  • Frozen veggies

How I make it:
Season the chicken, and pair it with fresh green beans and small potatoes. Add everything to a sheet pan and Bake at 400°F for about 25–30 minutes, Super simple and fills everyone up.

Easy Pasta Night
What I use:

  • Pasta
  • Sauce (or butter)
  • Parmesan cheese

How I make it:
Boil pasta, add sauce or butter, and top with cheese. That’s it. This is my “I’m tired” meal that always works.
